Specoolus Cookies
Specoolus or Spekulatius are spiced cookies with cinnamon and covered with crumble conb. They are typical of Belgium and the Netherlands. Originally they were preparing close to the Christmas period and for the anniversary of St. Nicholas but now they are prepared all year round.
Around the origin of the name speculoos there is no certainty but only some traditional hypotheses: some believe it derives from the Latin speculum which means "mirror", others instead suggest the relationship with another Latin term, "species" in its meaning translatable with "spices", for others still the name derives from the typical" molds "that are used to give the appearance to these biscuits, normally of carved wood and depicting characters in traditional clothes, which with a slight pressure are" engraved "on the biscuit dough, "specularly".
